Preparation and cooking time:
- 400 grams of Courgettes
- 2-3 Cloves of Garlic (crushed)
- 1 Onion (finely chopped)
- 1 Vegetable Stock Cube
- 1/4 litre of Water
- 2 pieces of Dairylea, Laughing Cow or similar Cheese Spread
- 1 desert spoon of Creme Fraiche
- Salt, Pepper, Grated Nutmeg, Oil
Sweat the onons and garlic in a little oil (or butter, if preferred) in a pan over a low heat.
Finely chop the courgettes, add to the onions and garlic with the water
Cook for 20 minutes.
Add the stock cube, cheese, nutmeg (if liked to your taste) and creme Fraiche and liquidise).
This Soup freezes well if larger quantities are made.
