Preparation and cooking time:
25 Minutes
Makes:
about 700g (11lb)
Ingredients:
- 500g (1lb 2oz) raspberries or other berries (or a mixture)
- 3tbsp lemon juice
- 500g (1lb 2oz) granulated sugar
Because this quick and easy jam is cooked in a jug, it’s perfect if you want a small quantity
1. Method
Wash the fruit and place in a large microwave jug with the lemon juice. Cook on full power for 4 minutes or until the fruit is soft – the time this takes will vary according to the power of the your microwave. (The time given is for an 800w or E rated microwave.) Stir in the sugar until it dissolves. Cook, stirring every 3 minutes and removing any scum, until the jam sets when a little is placed on a chilled saucer. This will take about 16-20 minutes.
Leave to stand for 5 minutes then pour into warm sterilised jars. Seal and cool before labelling and storing for up to a year. Once opened, refrigerate and eat in 3-4 weeks.
