Old Fashioned Strawberry Jam

about 2.2kg (5lb)


  • 1.3kg (3lb) strawberries, hulled and wiped, washed if necessary and drained well
  • Juice of 1 large lemon (about 2tbsp)
  • pectin stock or commercial pectin
  • 1.3kg (3lb) granulated sugar

1. Method

Put the fruit in a large pan with the lemon juice and simmer gently until the juices begin to run – about 10 minutes. Mash the strawberried with a potato mashed and continue to simmer for another 5 minutes until the fruit is reduced to a thick puree.

Remove from the heat and do a pectin test. Strawberry jam is particually tricky to set, so if necessary, add up to 300ml
